From vines to spirits

The story of our spirits begins just a few footsteps from our distillery…on our Domaine Asmara estate vineyard!
As the saying goes “great wines come from great vines”, we believe that great spirits also come from great vines.

The journey begins with hand pruning the vines in winter. The varieties on our vineyard are Shiraz, Cabernet Sauvignon, Grenache, Durif, Cabernet Franc plus Viognier. 


These many grape varieties will then give us an abundance of different fruit flavours to shine through in the spirits.


Once mother nature has done the magic during spring, summer and autumn to produce grapes with intense flavours, we hand harvest them.

The grapes are then carefully crushed and wild yeast fermented (i.e. the natural yeast on the grapes). This natural fermentation converts the sugars of the grape juice into wine with an alcohol content of approx. 15%, while extracting the great flavours of the grapes.  Nothing artificial is added in any of the processing!

Now it is time for the distillery to come into action. Whereas most distilleries simply purchase bulk spirit, we small batch distil the spirit from our own wine.

 

This gives us full control to produce estate spirits of exceptional quality with a place of belonging- right in the heart of the Heathcote Wine Region!
